"Innovation in Catering industry " Promotes Students' Concern for Culinary Heritage, Innovation


To help students gain a better understanding of Food culture, the Faculty of International Tourism and Managment (FTIM) has invited

Mr. Dongjun Wu, a doctoral alumnus of the institution who currently holds the position of Catering Industry at the Xiamen Qishang Hotel

Management Group and serves as General Manager and Creative Director of Xiamen Culture Industry Limited, to deliver a lecture on

" Food Culture and Local Cultural Innovation" on April 19, 2023.

During the lecture, Mr. Dongjun Wu presented an analysis of the similarities and differences in the forms of Catering Industry in different

countries and regions. Mr. Dongjun Wu repeatedly emphasised that food is integral to culture, which serves as the foundation for the

dissemination of food practices. Furthermore, culture influences the evolution of food. The introduction of novel food traditions can

effectively stimulate local economic growth and satisfy consumers' desire for cultural experiences.

Mr.  Dongjun Wu showed his understanding of the innovation of food culture by paving the way for a number of experimental food

innovation projects he led in Xiamen. Whether it was the ingenuity in developing the dishes or the details, all of them embodied the cultural

heritage and sublimation in the food. At the same time, Mr. Wu also shared his experience in restaurant business, allowing the students to

discuss what they had learned, ask their own questions and jointly explore the development of the restaurant industry.

Networking with industry professionals enables students to develop a better understanding of market prospects and retain a sharp eye on

industry dynamics. At the same time, the sharing of industry professionals can bring more diverse cross-industry perspectives, lifting the

curtain of the sector and allowing students to discover their ideal career route or research area. In the future, FITM will invite more exceptional alumni and industry leaders to participate in the seminars, providing FITM students and faculty with quality and diverse industry sharing

opportunities.
